Turmeric & Coconut Energy Balls

Here is a very easy and super yummy recipe! It takes less than 10 minutes to make these energy balls, you can store them in the fridge for up to 7 days, or you can even freeze them.

It’s a healthy snack for when you crave for sugar and the ideal bite if you need a bit of energy just before you go to the gym. Just make sure you like turmeric as it gives a nice spicy taste.

You’ll only need 6 ingredients – I recommend you to choose them organic to get all the benefits, but if they’re not, no worries at all, the taste will be as good! 🙂

 

INGREDIENTS* FOR 10 DELICIOUS BITES:

  • Organic pitted Medjool dates – x8
  • Organic raw cashews – 3/4 cup
  • Organic chia seeds – 1 tablespoon
  • Organic turmeric  – 2 teaspoons
  • Organic coconut oil – 1 tablespoon
  • Desiccated organic coconut

*All my ingredients – except the coconut oil – come from one of my favorite shops, The Source Bulk Foods in Prahran, Melbourne. The bulk system is just great as you buy exactly what you need. They have an incredible range of products, I always find what I need and also discover news stuff. The coconut oil I use at the moment is the one from Peace Love & Vegetables. To be honest, I can’t make any difference between the brands, I got this one because 1. the jar is huuuge which is convenient as I put coconut oil in everything, 2. it was on sale at my other favorite shop.

 

6 INGREDIENTS, 6 EASY STEPS:

  1. Place the cashews in the food processor and pulse until they are crushed.
  2. Add the rest of the ingredients and pulse again until it is mixed.
  3. Once you have a big sticky ball in the food processor, it means it’s ready.
  4. Take a bit of the mixture and roll it into a ball between your palms. And continue until your 10 balls are made.
  5. On a plate, spread desiccated coconut and roll the balls by one by one to cover.
  6. Place the balls in the fridge for at least 1 hour. Tick-tock, ready  to eat!
